Reading this was actually quite difficult fo...WOW!<br /><br />Reading this was actually quite difficult for me. Not because of your writing, which is vibrant with joy and energy, but because of how genuinely heartbroken I was to miss the historic event of two dedicated Heston blogs joining forces for the ultimate awesome meal. You have no idea how long I spent looking at the menu and various blog photos deciding what I would've ordered. Ling and I will *definitely* have to take you up on that Australia offer, I'm far too stubborn to let 10,538 miles come between our friendship and shared enthusiasm.<br /><br />That said, I also read the entire thing with an ear-to-ear grin on my face. We've been fans of your blog for years now, as much for the effort and dedication you put in as for your choice of favorite chef, so seeing just how much pure fun you had at Dinner was about as rewarding as possible.<br /><br />Ever since we spoke on the phone I've been looking forward to seeing these pics. The spit photo looks even better than you described. Because they were between services I imagined it'd be empty, to be stood in front of a fully spit is nothing short of incredible. You weren't joking about the stem on that martini glass either!<br /><br />Also, I remember you said you got to see how the Meat Fruit was made, but I had no idea you'd gotten quite *that* up close and personal with it. Brilliant! (I gotta ask, were you not a little bit tempted to steal the leaf after you'd eaten the fruit?).<br /><br />The texture of the bread, the flavour of the octopus, the sauce with the pigeon... there's so much I wanna ask more about! It's almost painful seeing these pics and knowing I ought to have been there. I'm just so glad Sabina and Kevin managed to make the experience as special as you deserved it to be. Those two are the real heroes of the day, whereas I was just a constant stream of interrupting text messages. Sabina was such a hero, particularly for dedicating a good chunk of her working week to listening to my ramblings then making magic happen.<br /><br />I was a bit gutted when I heard they hadn't been able to get the triple cooked chips out to you, but when Kevin called me back to say he'd replaced them with a complimentary ice cream trolley I was hugely impressed and pleased. I think every bit of your excitement in that video is fully justified. (and we'll all just have to go to Melbourne to tick off the chips)<br /><br />About that pigeon... I know you said you can source it near where you live. You'll be pleased to hear that the recipe for the pigeon dish in the book (which should be with you soon) doesn't require an awful lot of specialist kit, so with a hefty ingredient list and a clear weekend it;s definitely one that you could realistically recreate at home. Maybe good as the winter weather draws in over there?<br /><br />I really can't express how happy it makes me to read and re-read this post and see just how much you enjoyed this dream meal. It looks like everything you deserved for it to be.Except the bit where they didn't write your blog URL on the plate like I told them to. But "congratulations" sounds like a good fit.<br /><br />I can't wait to see how this inspires your cooking.<br /><br />P.S.
